Entremet: Chocolate mousse w/ mango vanilla cream, caramel cremeux, lime & almond sponge
Bread: Parker House Roll w/ bacon, onions & Gruyere
Bonbon: Salted caramel milk chocolate
Plated Dessert: White chocolate espresso mousse w/ chocolate cremeux, cashew nougatine & ice cream

CHRIS:
Entremet: Chocolate mousse w/ vanilla cremeux & raspberry jam
Bread: Brioche w/ bacon maple butter
Bonbon: Coffee-infused ganache & caramel
Plated Dessert: Almond cake w/ banana caramel, banana ice cream & mango sauce
